Can’t Survive on Candy Alone: Halloween Week Recipe Round Up

Happy Halloween week! If you’re anything like me, you’re extremely pumped to eat pumpkin shaped peanut butter cups with your morning coffee, and you’re waiting with baited breath to raid your kid’s trick-or-treat haul (no? just me?)

But I also know that we cannot live off candy alone, and we will have some real grumpy goblins and ghouls up in here if we don’t get some real food on the table to counteract the sugar-rus

So here are a few of my favorite fall recipes to round out the week – A dip to entice vegetable eating, a comforting make-ahead meal for The Big Night, and a cocktail that will put some pep in your step, because parents, more than anyone, deserve a treat. 

1. Yogurt Dip with Not Just Pesto

Our recipe developer Phoebe came up with this simple dip for our Pesto Baked Chicken Wing Recipe

It’s also great with veggie sticks, or pita bread. Serve it in a cute bell pepper carved like a pumpkin (if you’re feeling super festive and by some miracle have time to tackle a little project.) Or, just spoon it into a bowl and feel plenty smug for feeding your family a snack with both vegetables and protein. 

Here’s the recipe:

In small bowl stir together 1 cup of (preferably full-fat) Greek yogurt with 1 4-oz. jar of not just pesto, and 1/2 teaspoon garlic powder. Keep in the fridge until you’re ready to serve!

2. Spaghetti Squash Parm

Cozy, easy to make ahead, and packed with protein, this Spaghetti Squash Parm made with Italian sausage and not just pasta sauce is the perfect meal to have on hand for hungry trick-or-treaters and their brave parents.

3. Espresso Martinis

Speaking of brave parents, this Espresso Martini made with not just caramel is a better dessert than anything you’ll find in your kids candy bucket. Sweet, smooth, with a kick of caffeine so you can keep up with the little monsters.
